Anyone else agree it’s hard to eat salad in the winter 🥶 I just want warm food so this is my Warm Winter Salad!
-Roast seasoned and chopped butternut squash, broccoli and onions on 350 F for about 25 minutes. I took out the broccoli once it started to get darker so it wouldn’t burn.
-Wash and chop kale and add it into a bowl where you can season it with salt and pepper. I also like to massage olive oil into the kale.
-Chop up a fruit (I added a green apple)
– Toast pine nuts on medium heat for about two minutes. Be careful because they burn easily!
-Once the veggies are done, combine all ingredients in a bowl and enjoy 😃
