🥥Chicken Tuscany 🥥
•I used coconut milk for this recipe because I’m trying to eliminate dairy ( I know crazy) and I was really nervous there would be a strong coconut taste but I didn’t taste it!

What You Need
•Chicken Tenders
•2 cups spinach
•1 can coconut milk
•1/2 cup sun dried tomatoes
•1 tablespoon of corn starch
•1/4 cup almond flour
•1/2 cup Chicken Stock
•1 tablespoon avocado oil
•1 teaspoon garlic powder
•1 teaspoon Italian seasoning
•1 teaspoon red pepper flakes
Optional
•1/4 cup heavy cream
•1/2 cup Parmesan cheese

How To
1. First, add the oil to a pan and cook the chicken tenders through until golden brown.
2. While the chicken is cooking, add your chicken stock and flour and whisk together. In another bowl mix the tomatoes, coconut milk and seasonings.
3. Once the chicken is browned, remove from the pan and add the chicken stock and flour. Let this simmer for 1 minute.
4.Add the second bowl and whisk for about 2 minutes. Add in the cornstarch and you should notice the sauce thickening. If you are using heavy cream also pour that in.
5. Add in the spinach once the sauce has thicken and let it wilt.
6. Add back in the chicken and the parm if you are using and let it sit for 3 minutes.
7. Enjoy 😉
