Shrimp scampi revampied
Spaghetti squash has become a staple in my dinner routines the past couple of months 🍝 mostly because all you do is cut it in half, bake it and then scoop it out!
For the shrimp 🍤 I cooked it in a pan for about 4 minutes on each side and then set it aside on the plate.
For the sauce I added 2 tablespoons of butter to roasted garlic, red pepper and lemon juice. You can always add 1/3 cup of wine 🍷
Then I scraped out the spaghetti, added the shrimp and sauce 🤤
