This butternut squash soup is so good I made it twice in one week!

Ingredients
* 2 tablespoons extra-virgin olive oil
* 1 large yellow onion (chop it up)
* 1 teaspoon sea salt
* 1 (3-pound) butternut squash, peeled, seeded, and cubed
•1/2 cup heavy whipping cream
* 3 minced/ chopped garlic cloves
* 1/2 tablespoon of rosemary
* 1/2 tablespoon of thyme
* 1 teaspoon grated fresh ginger
* 3 to 4 cups broth (I used chicken)
* Freshly ground black pepper

How to:
* Peel and cut your butternut squash.
* Bake on 350 for about 20-25 minutes or until the squash is soft.
* Heat the oil in a large pot over medium heat.
* Add the onion, salt, and fresh pepper and sauté until soft – about 5 to 8 minutes.
* Add the garlic, rosemary, thyme, and ginger and stir for about 1 minute.
* Add 3 cups of the broth. Bring to a boil, cover, and reduce heat to a simmer.
* Cook for about 10 minutes.
* Let cool slightly and pour the soup with the squash and heavy whipping cream into a blender. Blend until smooth.
