Pre-WFH I would meal prep salads for the entire week and would always take an hour lunch.
I feel like with WFH it’s a lot harder to stop working and make lunch so I decided to meal prep this salad last night for today. Normally I just eat what I can make quickly and I end up eating very late and still hungry. This leads to me eating a lot of snacks and hijacking my fitness goals!
I prepped this salad by air frying chickpeas, cauliflower and butternut squash. I added arugula and mixed greens to a bowl, added the veggies, 1 hard boiled egg and Turkey slices with a sprinkle of black pepper and hemp seeds. I topped it off with a little olive oil and lemon juice and it is so good!
All I had to do today is open the container and add on dressing!
