These brussel sprout chips are such an easy and great idea for an appetizer to share or to eat as a snack!!

-cut your brussel sprouts and remove the end. I use traderjoes precut ones, so they are already cut for me.
-Boil the brussel sprouts so they are soft. I did this by putting them in a bowl filled about 1/4 the way with water and then microwaved for about 2 minutes
-With the bottom of a cup, smash the sprouts so they are flat
-Line a pan with parchment paper, lay the sprouts out and drizzle with olive oil. Sprinkle salt, pepper and Parmesan cheese
-Bake on 400 for about 20 minutes or until they start getting brown. I like mine crunchy and brown so I do longer. You do you
-While the sprouts are baking, make your “cup” dip. I mixed about 2 tablespoons of organic mayonnaise with lemon juice, pepper, salt, thyme and roasted garlic. For the garlic, I minced about five cloves and warmed them in a pan until they were brown. Mix it all together.
-When the Brussels are done, dip and enjoy 😉
