Zoodle Shrimp Scampi 🍤
Starting to use shrimp more in my weekly meals and this one will be a regular! My mom and sister requested I made more – that’s how you know 😎
I used tailless shrimp, onion, garlic, 2 tablespoons of butter, tablespoons of avocado oil, 1/4 cup white wine, pepper and salt
•I melted the butter and oil and sautéed the onion and garlic in a pan.
•Then I added shrimp seasoned with salt and black pepper and cooked for about two minutes
•I added the wine and let the shrimp cook on the other side and squeezed half a lemon on top
•I let the shrimp sit in the sauce for another minute before serving
For the zoodles I sautéed onions, garlic and olive oil while I zoodled my zucchini! Then I just let then zucchini sautée for about 10ish minutes.
